Tips For Marinating

Marinate in a large plastic zip-lock bag for easy clean up. Place the marinating bag with marinade and meat in the refrigerator and turn occasionally.

Chicken and seafood absorb a marinade better if you score the skin prior to marinating.

Never re-use a marinade that has come into contact with raw meat, poultry or seafood. Set aside a portion of the marinade to use for basting and as a dressing over cooked food. Throw out the used marinade immediately to be safe.

Grilling Tips

After meat, poultry and seafood have been marinated in the refrigerator, wait until they return to room temperature before grilling to ensure even cooking.

For outside grilling, make sure the grill grate is clean and well-oiled with olive oil to prevent food from sticking.

Baste with marinade as you cook. Basting prevents burning and adds more flavor.

Time Saver

If you don’t have the time to marinate, Simply use the marinade for basting while you grill.

I love the chubby sauce I bought the medium because The Prime Butcher here in NH said it was less hot than the mild ?? Now I read it is not oops lol. Well how long should I marinate my steak tips in it for the best flavor ? And if I do it with the chicken too how long is best to marinate the boneless chicken breasts ?
